Chocolate Orange Trifle

Serves 8

      • 4 double choc muffins
      • 4 oranges (grate rind from all 4, squeeze juice from 2 and segment 2)
      • Cointreau or other orange liqueur (optional)
      • 1 tub of chilled, ready-made custard
      • 200ml whipping cream
      • 25g icing sugar
      • 50g plain chocolate

 

  1. Cut the muffins into thick slices and place on the bottom of a straight-sided dish.
  2. Place half the orange rind, all the juice and segments and orange liqueur in a bowl. Mix together and spoon evenly over the chocolate muffins.
  3. Pour the custard on top.
  4. Whip the cream to soft peaks. Add icing sugar and the remaining orange rind, and spread the mixture over the custard.
  5. Finally, grate chocolate over the cream and chill for at least an hour before serving.
